Chunky Roast Kumara
600g kumara
2 tablespoons olive oil
1 tablespoon fresh thyme, oregano or rosemary
3 tablespoons Chunky
Oven at 180C. Schrub the kumara skins and cut roughly into 2cm chunks. Place in ceramic roasting dish and add oil, thyme, ¼ cup hot water, salt and ground pepper.
Mix well and roast for 45mins, stirring once.
Test kumara with sharp knife and when almost cooked add Chunky and return to oven for another 8 minutes. Serve hot.
Serves 4 as a side dish.
