Salmon Baked In Salsa Verde Recipe
4 x 200g hot smoked salmon fillets Salsa Verde1/3 C chopped Dill1/3 C Flat Leaf Italian Parsley, chopped1/3 C Mint, chopped2 Cloves Garlic, sliced1 T Gourmet Direct Sweet Chilli mustard8 Anchovey fillets3 T Salted Capers, rinsed1/3 C Olive Oil2 T Lemon Juice Preheat the oven to 200 CFor Salsa Verde:Place the Dill, Parsley, Mint, Garlic, Mustard, Anchovies and Capers into the food processor and mix until smooth. Add the Olive Oil, and Lemon Juice, then process again until smooth. Place the Salmon in a baking dish, and spread with the Salsa VerdeBake 6 – 10 minutes.
Serve with Steamed Greens.
Serves 4.
