Pigs in Blankets by Jamie Oliver
You just can't just have a turkey without these! Make sure you use good quality sausages and bacon and you'll be glad you did.
Serves 8
Ingredients
A bunch of fresh sage, leaves picked
olive oil
8 rashers of smoked streaky bacon
8 good-quality pork sausages (you'll need two packets of Gourmet Direct Frank's English Breakfast sausages)
Method
Preheat the over to 200°C/400°F/gas 6. Drop the sage leaves into hot water, then immediately drain them in a sieve and leave to cool on some kitchen paper. Once cooled, toss the leaves in a little olive oil.
Stretch the bacon out using the back of a knife, and place 3 sage leaves on to each rasher. Place a sausage across the top of the sage leaves and roll each rasher up. Lay your ‘pigs in blankets' in a roasting tray, drizzle with olive oil, then cover and place in the fridge until you're ready to cook them.
They will need to go in the oven 30 minutes before you want to serve.
